5 cups chopped bok choy, stalks and leaves (about 1 lb)
1 15-oz can mandarin oranges
1/2 cup sunflower seeds
Toss bok choy, orange segments, and sunflower seeds.
Whisk together the BRIANNAS Saucy Ginger Mandarin Dressing, mayonnaise, and lemongrass in a small bowl then combine with bok choy mixture.
Recipe submitted by Carlyn Osborn from Baltimore, Maryland. She says, "Bok choy may be full of vitamins and calcium but I'd been unimaginative in using it mainly as a substitute for celery in various soups and stews. When I learned that bok choy is part of the cabbage family I decided to try using it in a coleslaw recipe. BRIANNAS Saucy Ginger Mandarin Dressing adds flavor to the usual mayonnaise-based dressing and sunflower seeds boost the crunchiness. Enjoy!"
