Premium Southern Caviar

Made with Real French Vinaigrette

Ingredients:

  • 3 ears roasted, white shoepeg corn (or 1 – 11 oz. can)
  • 1 12 oz. can black eyed peas
  • 1 12 oz. can black beans
  • 1 large sweet onion
  • 1 14 oz. can diced tomatoes
  • 1 4.5 oz. can green chilies
  • 1/2 tsp. salt
  • 1 tsp. black pepper
  • 1 12 oz. bottle BRIANNAS Real French Vinaigrette Dressing
  • White Corn Chips
  • Chopped green onion (for garnish)

Directions:

  1. Roast 3 ears of white shoepeg corn, cool and remove kernels into large bowl. *If you do not have whole ears, 1 can of (drained and rinsed) white shoepeg corn will work.
  2. 1 can of plain premium black eyed peas. Drain and rinse and add to large bowl.
  3. 1 can of premium black beans. Drain, rinse, and add to bowl.
  4. 1 large sweet onion chopped, add to bowl.
  5. 1 can premium diced tomatoes. Drain and add to bowl.
  6. 1 small can of premium diced green chilies, drain and add to bowl.
  7. Add 1/2 teaspoon of salt and 1 teaspoon of black pepper to ingredients in bowl.
  8. Pour 1 whole bottle of premium BRIANNAS Real French Vinaigrette Dressing into bowl and gently mix with ingredients.
  9. Garnish with chopped green onion.
  10. Let sit 30-45 minutes. Serve at room temperature with premium white corn chips.
