Recipe submitted by Carlyn Osborn from Baltimore, Maryland. She says, "Bok choy may be full of vitamins and calcium but I'd been unimaginative in using it mainly as a substitute for celery in various soups and stews. When I learned that bok choy is part of the cabbage family I decided to try using it in a coleslaw recipe. BRIANNAS Saucy Ginger Mandarin Dressing adds flavor to the usual mayonnaise-based dressing and sunflower seeds boost the crunchiness. Enjoy!"
