Got a mandolin? Then you’re in luck. This gorgeous salad will come together in minutes. It’s green as can be, and pairs perfectly with spicy American, Middle Eastern and Mexican foods. Refreshing, crisp and flavorful, and will last a day or two in the fridge!
Ingredients:
2 large English cucumbers, thinly sliced, skin on
1/2 bunch cilantro
1 jalapeno, seeded and finely diced
1/4 of a red onion, very thinly sliced
3 tablespoons fresh lime juice
1/2 teaspoon chili flakes
1/2 teaspoon ground coriander
Salt to taste

Directions:
Place all ingredients in a bowl, and gently toss.
Taste and adjust the salt.
Note: Cutting the cucumbers thicker (¼ inch) with keep them crisper longer.
