  • 1 cup orzo pasta, uncooked
  • 1 cup feta, diced
  • 1 cup cherry tomatoes, halved
  • 15 oz can chickpeas
  • 1 cup cucumber, diced
  • ⅓ cup fresh mint, chopped
  • 1 red onion, diced
  • Salt and pepper
  • 1 cup Kalamata olives, pitted and whole
  • ½ cup BRIANNAS Real French Vinaigrette

  1. Cook orzo to al dente, according to package directions. Drain, rinsing with cold water.
  2. Combine orzo, tomatoes, cucumber, red onion, olives, feta, chickpeas, and mint in a medium-sized bowl. Salt and pepper to taste.
