Nothing beats a classic Caesar salad, especially when it comes with a heart-healthy twist, 100% avocado oil! Tossed with chopped romaine lettuce, crunchy croutons and shaved cheese, it’s a heavenly balance of flavors. Serve it with grilled steak, and sit down to an unforgettable meal.

PREP TIME: 20 minutes



  • ½ cup cubed bread
  • extra virgin olive oil
  • salt
  • 2 bunches of chopped romaine
  • 1½ cups roasted chickpeas
  • ⅓ cup shaved Parmesan cheese
  • 2 tablespoons chopped chives
  • 2 radishes, thinly sliced
  • 2 tablespoons toasted pine nuts

  1. Line a baking sheet with parchment paper, and preheat your oven to 350°F.
  2. Place the bread cubes on the baking sheet, toss with olive oil and salt, and bake until toasted (about 10 minutes).
  3. On a generous platter, assemble your romaine. Dress lightly with dressing, then add radishes, chickpeas and croutons.
  4. Drizzle with more dressing. Top with cheese, chives and pine nuts.
