Ingredients:
1/2 cup BRIANNAS Saucy Ginger Mandarin Dressing
2 teaspoons grated fresh ginger root
4 (4-oz. each) tilapia fillets
8 (6-inch) corn tortillas, warmed
8 red lettuce leaves, top 6 inches only
1/2 cup BRIANNAS Rich Poppy Seed Dressing, more if desired
1 cup small, diced fresh pineapple
3/4 cup finely shredded carrots
1 avocado, pitted, peeled, diced small
1/4 cup packed mint leaves
Directions:
Pour Saucy Ginger Mandarin dressing into a sealable plastic bag; add ginger and tilapia and seal top. Turn bag to coat evenly. Marinate at room temperature for at least 20 minutes, turning bag once.
Heat oven to 450. Spray a 9×9-inch baking dish with cooking spray. Drain fish and arrange in a single layer in dish. Bake for 8 to 10 minutes or until just opaque throughout. With spatula, break fillets into 1-inch strips.
