Summer Fruit And Broccoli Salad With Goat Cheese

Try this crisp broccoli salad with a twist – fresh fruit! It calls for fresh strawberries, blueberries, mango and grapes, plus BRIANNAS New American Creamy Balsamic dressing.

PREP TIME: 15 minutes

Ingredients:

  • 1 pint fresh, ripe strawberries, washed, capped and quartered
  • 1 cup fresh, ripe blueberries, washed and drained dry
  • 1 large, ripe mango, peeled and cut into bite-size chunks
  • 1 cup seedless green grapes, washed, patted dry and halved
  • 2 cups fresh broccoli smalll flowerets, washed and drained dry
  • 4 ounces goat cheese, crumbled
  • 1/2 cup BRIANNAS New American Creamy Balsamic Dressing
  • 1/2 cup sugared pecans

Directions:

  1. Place strawberries, blueberries, mango chunks, green grapes and broccoli in a large bowl.
  2. Pour BRIANNAS New American Creamy Balsamic Dressing over all in large bowl; toss to coat.
  3. Top salad with goat cheese and sugared pecans.
  4. Serves 6.
  5. Cook’s note: If serving salad later, cover all fruit and broccoli and place in refrigerator. Right before serving, add dressing and toss then top with goat cheese and pecans.
