Summer salads don’t get any better than this wedge salad recipe with homemade pico de gallo! Even better, it’s topped with BRIANNAS Creamy Blue Cheese dressing!
Ingredients:
One large head of iceberg lettuce, washed and cut into quarters (wedges)
½ to one cup of blue cheese crumbles
BRIANNAS Creamy Blue Cheese Dressing
Pico de gallo
One cup seeded, diced tomatoes (ripe but firm)
¼ cup diced red onion
1 Tbsp. minced garlic
One diced jalapeño (remove seeds & membrane for milder flavor)
2 Tbsp. chopped cilantro
Juice of one lime
Directions:
Mix all pico ingredients together and chill. Keeps in airtight container for 2 days. Makes about 1 1/2 cups.
Place one chilled lettuce wedge on salad plate and top with BRIANNAS Creamy Blue Cheese Dressing.
Spoon pico de gallo over all and top with cheese crumbles.
