Summer Fruit Spring Rolls with Mango Dip

  • 9-10 rice paper wrappers
  • 1 mango, cut into slices
  • 10-12 large strawberries, hulled and sliced
  • 1 red or green apple, cored and cut into matchsticks
  • 2 tbsp chopped mint
  • 3-5 kiwis, peeled and sliced

  1. Chop up your fruit and place on a cutting board to set aside.
  2. Prepare the rice paper wrappers as per the instructions on your packaging. It may help to set aside some water in a small bowl, dip the rice papers into water until they become transparent, and slightly pat dry.
  3. Lay the rice paper wrappers flat and fill them, lining up fruit in the center of the roll. The arrangement is completely up to you, so get creative with it!
  4. Use about 1/10 of the fruit on each roll, so it is evenly distributed. Keep in mind that you’ll want to have fruit on the bottom that creates a good structure for the rolls.
  5. To roll the spring rolls, fold the top and bottom over the filling, then roll from left to right, tucking the filling in as you roll toward the end. Continue to roll tightly until finished, then lay fruit spring rolls on the folded edges and set on a plate.
  6. Serve with BRIANNAS Organic Mango Vinaigrette poured into a small bowl. Dip and enjoy!
