Street tacos are all the rage, and this street taco recipe for baja shrimp tacos really delivers. Easy to make and fun to eat, especially with BRIANNAS Creamy Cilantro Lime dressing in the mix!
Ingredients:
6 corn tortillas, warmed
1 lb. medium size shrimp, shelled and deveined
1/2 cup fresh cilantro leaves for garnish
Salsa
1 medium size mango, peeled and diced
2 tbsp. fresh jalapeño, chopped
1/3 cup red onion, chopped
1/4 cup fresh cilantro, chopped
1 avocado, chopped
1/3 cup tomato, chopped
1 lime
1 bottle BRIANNAS Creamy Cilantro Lime dressing
Directions:
Marinate shrimp for 1 hour in 1 cup of Creamy Cilantro Lime dressing. Drain and skewer. Place on each side the grill for 2 minutes, or until pink. Remove from grill and set aside.
In medium bowl mix the mango, jalapeño, onion, fresh cilantro, avocado, tomato, juice of 1/2 lime and 1/3 to 1/2 cup of Creamy Cilantro Lime dressing. Add grilled shrimp. Toss gently.
Add salsa/shrimp mixture to each tortilla and garnish with fresh cilantro leaves. Drizzle additional Cilantro Lime dressing on top, if desired.
