Packed with colorful fresh vegetables and a healthy helping of plant-based protein and fiber, this gorgeous salad happens to be a nutritional powerhouse. Toss everything with our cilantro lime celebration, and don’t expect any leftovers. It’s a gluten-free crowd pleaser for picnics, potlucks and parties.

Ingredients:

  • 2 cups of sweet corn, cooked
  • 15 oz can of black beans
  • 10 oz cherry tomatoes
  • 1 orange bell pepper
  • 5 green onions
  • 1 large head of romaine

Directions:

  1. Drain and rinse black beans.
  2. Dice bell pepper, half tomatoes, finely chop green onions, and roughly chop romaine.
