Mamma mia! This protein-packed salad is a vegetarian’s delight and the quick, dreamy solution for lunch on the lighter side.

COOK TIME: 10 Minutes


  • 1 small head of romaine lettuce, chopped
  • 1 can of garbanzo beans, drained
  • 4 ounces of fresh mozzarella pearls, without oil
  • 2 cucumbers, chopped
  • 1 red bell pepper, chopped
  • 1 small purple onion, chopped
  • 1 pint of cherry tomatoes, halved
  • 1 cup BRIANNAS Home Style Garlic Vinaigrette

  1. Combine chopped ingredients in a large bowl.
  2. Add tomatoes and beans.
  3. Toss with Garlic Vinaigrette.
  4. Top with mozzarella pearls and serve.
