Mediterranean Salad with Citrus Shrimp

This Greek salad is packed with a rainbow of crunchy vegetables, tossed in a classic garlic vinaigrette, and absolutely loaded with tangy citrus shrimp. Bursting with nutrient goodness and powerful protein, it’s your new favorite meal-sized salad.

Ingredients:

  • 6 cups chopped romaine
  • 1 yellow bell pepper, thinly sliced
  • 1/3 cup chopped red peppers
  • 1 cup grape tomatoes, halved
  • 1 cup sliced seedless cucumber
  • 1 (15.5 ounce) can chickpeas, drained and rinsed
  • 1/4 of a medium red onion, very thinly sliced
  • 1/2 cup packed flat leaf parsley, chopped
  • 1/4 cup mint leaves, chopped
  • 2 tablespoons chopped fresh oregano
  • 1/3 cup crumbled feta
  • salt and pepper to taste

    • 1 pound large shrimp, peeled and deveined

    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper

Directions:

  1. Place the shrimp in a large bowl and toss with the BRIANNAS Citrus Mediterranean Marinade. Let sit for 20-30 minutes, but no longer as the marinade will begin to cook the shrimp.
  2. Preheat a skillet, grill pan, or outdoor grill to medium-high heat. Cook shrimp for 2 minutes per side, until cooked through.
  3. Assemble the salad: Add romaine to a very large bowl. Toss with chickpeas, tomatoes, cucumber, red onion, bell pepper, roasted red pepper, feta, parsley, mint, oregano, salt and freshly cracked black pepper.
  4. Add the shrimp and BRIANNAS Garlic Vinaigrette and toss again. Serve right away.
