medium red onion, very thinly sliced
mint leaves, chopped

BRIANNAS Roasted Garlic Vinaigrette
yellow bell pepper, thinly sliced
grape tomatoes, halved
chickpeas, drained and rinsed
packed flat leaf parsley, chopped
chopped fresh oregano
salt and pepper to taste
pound large shrimp, peeled and deveined

Place the shrimp in a large bowl and toss with the BRIANNAS Citrus Mediterranean Marinade. Let sit for 20-30 minutes, but no longer as the marinade will begin to cook the shrimp.
Preheat a skillet, grill pan, or outdoor grill to medium-high heat. Cook shrimp for 2 minutes per side, until cooked through.
Assemble the salad: Add romaine to a very large bowl. Toss with chickpeas, tomatoes, cucumber, red onion, bell pepper, roasted red pepper, feta, parsley, mint, oregano, salt and freshly cracked black pepper.
Add the shrimp and BRIANNAS Garlic Vinaigrette and toss again. Serve right away.
